Nutrition Today

This course relates scientific concepts of nutrition to the function of nutrients in basic life processes. It emphasizes individual needs; functions and sources of nutrients; current nutrition and health issues; scientific method for analysis and evaluation of nutrition information; dietary guidelines and current nutrition recommendations; digestion, absorption, and metabolism; health, fitness, and disease; nutrition in the life span; and food safety. Students evaluate their food intake using several methods, including a computer diet analysis. UC CREDIT LIMITATION: Credit for NUTR 100, NUTR 100H, NUTR 105, or NUTR 125. C-ID NUTR-110.

Instructor notes: There are two required item for this class and please DO NOT take this course unless you plan on having purchasing the textbook (Nutrition: Concepts & Controversies, 14th edition by Cengage) and the Diet & Wellness Plus Access Code.
Requirements for this course include:  
  • Have regular access to a computer with connection to the Internet. 
  • Attend class weekly.
  • Everyone will need access to Microsoft Office for Windows or Microsoft Office for Mac as Word and PowerPoint are required. Homework submitted in formats that are not doc, docx, or pdf will not be graded. 
  • Be willing to spend over 9 hours per week on the course.  
  • Have moderate experience with the Web, email, attachments, downloading, etc. 
  • Understand and apply appropriate email netiquette. 
  •  Although the course is a hybrid course, it is not self-paced. You are required to complete assignments for each week on your own time schedule within that week. Each student assignment is to be completed and submitted by the weekly due date and late work is not accepted. 
  • The class uses the Learning Management System, Canvas.
