Nutrition and Aging

This course focuses on the specific nutritional needs and problems in older adults. Topics include nutritional requirements, diet modifications, body system changes, body weight issues, nutrition-related chronic diseases, barriers to proper nutrients, drug/nutrient interactions, and community resources to assist the aging population. Diet and nutritional issues related to aging in a contemporary society are examined from physiological, sociological, psychological, and economic perspectives. UC CREDIT LIMITATION: Credit for NUTR 100, NUTR 105, or NUTR 125.

Instructor notes: There is one required item for this class and please DO NOT take this course unless you plan on having regular access to the book (The Blue Zones, 2nd Ed: 9 Lessons for Living Longer From the People Who've Lived the Longest by Dan Buettner, 2012.) Having access to a general nutrition textbook is advised. There is no need to purchase one. Nutrition textbooks are on reserve in the MiraCosta library and your instructor has copies of nutrition textbooks to loan out for the semester to students. Stop by her office during her office hours on Tuesday or Thursday. Requirements for this course include: 1)Have regular access to a computer with connection to the Internet. 2)Ability to submit homework in one of three formats only: doc, docx, or pdf. WORK SUBMITTED IN OTHER FORMATS WILL NOT BE GRADED. 3)This is a 100% online. Students complete all work on BlackBoard. Students must have a strong self motivation for studying and learning. 4)Be willing to spend over 9 hours per week on the course. 5)Have moderate experience with the Web, email, attachments, downloading, etc. 6)Understand and apply appropriate email netiquette. Although the course is online, it is not self-paced. You complete the assignments for each week on your own time schedule within that week. Each student assignment is to be completed and submitted by the weekly due date. If you wait until the due date to submit assignments or do exams and have technical difficulty, makeup testing or submitting late assignments is not allowed.
